The ingredient rollup allows you to insert data into the category form as well as create new items "on the fly".  For example, when creating a new category, you can use the ingredient rollup to assign any ingredients available from the new category all at once.  If an ingredient that you require does not exist, you can create it quickly using the ingredient rollup and assign it to the category at the same time.  For help on how to use rollups see the topic Rollups.
