Yes, indeed you can create your own themes.

 

Please note, this is not a step for the feint of heart, as some HTML experience is required to create Resort Chef themes, but, if you're armed with an HTML editor like Microsoft Front Page or similar, you shouldn't have too much trouble creating your own theme(s).
