Mise-en-place page

This view shows the mise-en-place details of the current recipe.  

 

There are two primary areas;  the recipe shown in tree form on the left side of the page and on the right in table form, a complete break-down of all ingredients or sub-recipes used in the main recipe.  

 

The tree on the left shows the structure of the selected recipe and shows all nested sub-recipes in a tree-like structure.  This is a great way to visualize the structure of a recipe particularly when it has several sub-recipes and those sub-recipes may have sub-recipes of their own. This section also displays the ingredient quantities required to produce the particular recipe and the cost associated with those quantities.

 

You can choose to view ingredients or recipes from the tabs at the bottom of the grid. You can also choose whether you would like to view the mise-en-place for the scaled quantity of a recipe by marking the check box "Show scaled recipe quantities and costs?" or leaving it unmarked to view the mise-en-place for the base production quantity only.

 

Name

 

When the ingredient tab is chosen from the bottom, all ingredients included in the recipe are listed.  This also includes ingredients from other sub-recipes within the current recipe.

 

When the recipe tab is chosen from the bottom, the name of all other recipes (or sub-recipes) included in the recipe are listed.

 

Quantity

 

The quantity of each ingredient as entered in the Ingredients and Costs page.

 

Unit

 

Usage units for the ingredient/recipe, as entered in the General Details page for the individual ingredient or recipe.

 

Cost

 

The cost of each individual component ingredient or sub-recipe within the main recipe (depending on whether you are viewing the ingredient or recipe tab at the bottom of the page.).
