Resort Restaurant provides facilities for you to keep track of your individual ingredient purchases (via the Invoice Form) and your stock count via the Store Form. This information, combined with overall sales revenue figures lets the program generate a 'Cost of Goods Sold' report at the end of each trading period. This report, along with the various purchase and stock total reports, give you all the figures you need to determine the overall profitability of your organization.
You can then combine this information with Resort Restaurant's recipe costing and menu engineering facilities to determine what changes you might need to make to improve your overall profitability.
