Labour tab
<< Click to Display Table of Contents >> Navigation: Functions > The function form > Recipes & costs page > Labour tab |
The Labour page allows you to enter labour costing details relating to function preparation. This allows you to calculate the total cost for preparation of your function. See the following image.
From the labour tab you can maintain the following:
•Preparation steps
•Preparation duration
•Staff types and numbers required
•Staff rates and productivity
Preparation steps
This section allows you to view the preparation steps that may be required for the function. These steps can be broken into sections such as setup, food preparation, plating, packaging, storage, cleaning etc. See the following image.
If a preparation step you require is not displayed, you can create or edit labour steps by selecting View->Labour Steps from the menu bar. This will launch the Labour Steps dialog. Newly created or edited labour steps will then appear in the labour steps list.
Preparation duration
You can enter the time it takes for each preparation step in these fields. Enter a duration in hours and minutes in the Duration field. Entries must be in time format (i.e. hh:mm). The duration will then be displayed in the Duration field. See the following image.
Staff types and numbers required
This section allows you to allocated the staff type and the number of staff required for each preparation step. See the following image.
Once you have selected which preparation steps, staff members and the time they are required, the program will calculate the labour cost for each preparation step. These costs will be based on the time required by each staff member and the pay rate for that member as designated in the Staff dialog. See the following image.
Staff Rates and Productivity
Rate/h
This field displays the hourly pay rate for the selected member as entered in the Staff dialog.
% Productivity
This field allows you to enter the percentage of total time that the selected staff member was required for this preparation. For example, you may have a staff member performing a certain task such as warming sauces and although the entire process may take an hour, in fact the staff member may only be busy with the preparation for half of the time. In this case, the productivity percentage would be 200%. Enter the appropriate percentage of productivity.
Adj. Rate/h
This field will show the adjusted rate of pay per hour based on the base pay rate per hour and the % productivity you have entered.
Cost
This field displays the total cost for each preparation.
