The Course page of the Search/Select dialog lets you select a course for insertion into a menu.
Just select a course from the list and click the OK button to insert that course into the menu you are editing.
Alternatively, double clicking a course will select that course and, close the Search/Select dialog and insert the selected course into the menu.
If you find that the course you want to insert into your menu does not yet exist, click the 
button. This will launch the Course Edit dialog with which you can create a brand new course and insert it into the menu.
